Sardinia: Italian: Sardegna, Sardinian: Sardigna or Sardinnya [sar'dinja], is the second-largest island in the Mediterranean Sea with an area of 23,821 km². It is situated between 38° 51' and 41° 15' latitude north and 8° 8' and 9° 50' east longitude. Sardinia is an autonomous region of Italy. The coasts of Sardinia is 1,849 km long.

Sardinia 'ISLAND of FAIRIES and SHEPHERDS':
In the 60s Aga Khan developed the beach paradise for the rich and famous but nowadays, thanks to private apartments and villa owners, the beautiful East Coast of Sardinia has become a lot more affordable. Emerald green crystal clear water and white sandy beaches attract beach and nature lovers but those, who really want to get to know the island and its culture, must also visit the heart of Sardinia, such as the Gallura with its cork oak forests, the karst mountains of the Supra Monte or the lonely village of Monte Iglesiente and the people who preserve their identity by maintaining the old traditions.

Sardinia is a mysterious and enchanting island, whose inhabitants still speak two old Romanesc languages and where almond trees are in bloom at Christmas. Traditions are lived and nurtured. The prototype of a Sardinian people is still the shepherd who leads his flock through barren and rough grazing land, and therefore contributes his share to the production of the popular pecorino cheese.

Shepherds were also believed to have invented one of the first musical instruments, a 'trimpanu', that produces a high-pitched tone that shys animals away. From the valleys of the Campidano to the granite peaks in Gallura and the cork oak forests near Tempio, you can even find traces of this Primitive culture: 7,000 Nuraghe, as the cone-shaped towers are called, are reminders of the Neolithic and Bronze Age in Sardinia. Archaic music such as the 'tenor' of Bonnanaro, is still sung 'a cappella' by simple farmers with 'big voices'.

Sardinia 'CUISINE':
Sards are said to live longer thanks to their healthy nutrition. Nowhere else in the world there live proportionally as many centenarians and the remarkable thing is that the life expectancy of men and women in Sardinia is not significantly different.
It is believed that good nutrition certainly plays a role in this record, and yet the praised polyunsaturated fatty acids found in fish, seem to play no role in the Sardinian tradition. While Sards are indeed an island nation, they seem to have had a deep aversion to the sea as it was the sea that brought various conquerors over the centuries and the malaria mosquito from swamps in the coastal areas. "All evil comes from the sea," is therefore a Sardinian proverb.
The Sardinian people have been able to preserve their diet and fish has only recently become part of the local cuisine.
The Sardinian flat bread "pane carasau"and the "pecorino" from Sardinia are the best known representatives, and local dairy and cereal products, lamb, pork, game, poultry, typical fruit, vegetables, herbs and honey dominate the Sardinian cuisine. A cooking culture has developed, which relies on few ingredients and a lot of 'juggling' to create and impressive variety of tasty dishes and the quality of produce on Sardinia's dining tables is of such good quality that elaborate seasoning is unneccesary. Salt and some local herbs complement a Sardinian meal perfectly.
So what should we learn from the Sards and their cuisine? Eat and drink! Or should we say: Wine and swine?

Sardinia 'SPECIALITIES' : Off the coast of Oristano, in the 'Wild West' of Sardinia, are the fishing grounds for tuna and mullet, from which a rare specialty is prepared: bottarga, the Sardinian name for dried fish roe. In the town of Oristano smaller factories dry the fish roe to preserve it. It sometimes becomes the consistency and the colour of dried beef. The roe is salty and very spicy, almost smoky in taste. It is used for pasta sauces, carpaccioor antipasti.
